She is constantly seeking out experimental lots and unique flavor profiles Her journey through the world of specialty coffee began behind the espresso machine, giving her a rare, 360-degree perspective on how a perfect roast translates into a perfect cup. With meticulous precision and a passion for discovery, Alsu leads our quality control and develops the unique, complex flavor profiles that define the Shavi experience. She ensures every bag of coffee that leaves our roastery is a true expression of our rebellious Georgian spirit.
Mickael Costache, Co-Owner & Managing Partner
A seasoned entrepreneur with operating experience across the Middle East, Europe, and the U.S., Mickael leads Shavi’s stateside expansion. He focuses on systemized excellence and a design-forward customer experience. His mandate is simple: turn Shavi’s bold Georgian spirit
into a world-class specialty coffee brand while growing a loyal community in the United States around it.
Anastasia Costache, Co-Owner
Anastasia brings global expertise in hospitality and marketing from New York, Dubai, Miami, and beyond to her role as Co-Owner of Shavi. As the creative strategist shaping the brand’s identity, she combines a sharp eye for trends with a deep instinct for culture, overseeing everything from café atmosphere and customer experience to brand storytelling. Deeply invested in the team, Anastasia drives a culture where craft, community, and innovation thrive, turning Shavi into more than a coffee brand.
Thibault Tughushi-Flament, Co-Owner
A civil engineer by training, Thibault's journey into coffee was a rediscovery of passion. As Co-Owner of Shavi, he champions a philosophy of "care"—a meticulous attention to detail that honors every person and every step of the coffee's journey, from the farmer to the final cup. He drives Shavi's adventurous spirit while leading the charge to educate the Georgian market onthe art of specialty coffee. For Thibault, the perfect cup is one that is shared, debated, and pushes the boundaries of what coffee can be.
